01 - 1 lb ground beef (80/20 blend recommended)
02 - 1 tsp kosher salt
03 - 1/2 tsp ground black pepper
→ For the Dill Slaw
04 - 2 cups finely shredded green cabbage
05 - 1/2 cup dill pickles, julienned or finely chopped
06 - 2 tbsp fresh dill, chopped
07 - 2 tbsp mayonnaise
08 - 1 tbsp apple cider vinegar
09 - 1 tsp sugar
10 - 1/4 tsp black pepper
11 - 1/4 tsp salt
→ For the Burger Sauce
12 - 1/4 cup mayonnaise
13 - 2 tbsp ketchup
14 - 1 tbsp yellow mustard
15 - 1 tbsp dill pickle juice
16 - 1 tsp hot sauce (optional)
17 - 1/2 tsp smoked paprika
→ For the Tacos
18 - 8 small flour tortillas (6-inch)
19 - 1 cup shredded cheddar cheese
20 - 1/2 small red onion, thinly sliced (optional)
21 - Extra dill pickle slices, for garnish
# Directions:
01 - In a mixing bowl, combine shredded cabbage, chopped pickles, fresh dill, mayonnaise, apple cider vinegar, sugar, salt, and pepper. Toss to coat evenly. Chill in the refrigerator until ready to serve.
02 - In a small bowl, whisk together mayonnaise, ketchup, mustard, pickle juice, hot sauce (if using), and smoked paprika. Set aside.
03 - Divide the ground beef into 8 equal portions. Season all sides with kosher salt and black pepper.
04 - Heat a large cast-iron skillet or griddle over medium-high heat. Place 2-4 beef portions onto the hot surface. Immediately press down with a spatula to flatten each portion into a thin patty. Cook for 1-2 minutes until deeply browned, then flip, top with a little shredded cheddar, and cook for 1 minute more. Remove and keep warm. Repeat with remaining beef.
05 - Wipe the skillet clean and briefly warm the tortillas until pliable.
06 - Spread a spoonful of burger sauce on each tortilla. Place a smash burger patty on top. Add a generous helping of dill slaw, red onion slices (if using), and extra pickle slices for garnish.
07 - Fold each taco and serve immediately.
