03 - Divide the ground beef into 8 equal portions. Season all sides with kosher salt and black pepper.
04 - Heat a large cast-iron skillet or griddle over medium-high heat. Place 2-4 beef portions onto the hot surface. Immediately press down with a spatula to flatten each portion into a thin patty. Cook for 1-2 minutes until deeply browned, then flip, top with a little shredded cheddar, and cook for 1 minute more. Remove and keep warm. Repeat with remaining beef.
